Cosimo Maria Masini is in San Miniato, Tuscany. High in the hills, the area is most famous for white truffles. The farm is on a single hill, with 40 hectares of vineyards, olive trees and arable land. With biodynamics at heart, Cosimo Maria Masini are passionate about mixing the use of the land to encourage as much biodiversity as possible. The vineyards are spread over 13 hectares, at about 100masl.
In order to keep freshness in the wine, the grapes are pressed immediately after a 5hour premaceration. The juice is taken away, in order not to get too much colour, and moved to stainless steel for fermentation and a 4 month elevage.
