Nicolas and his wife Karine farm 25 hectares of vines in Corbieres, not far from the Mediterranean sea in the South of France. Having previously sold the grapes off to local negociants, Nicolas took over his family Domaine in 2000, beginning a painstaking conversion to organic and biodynamic viticulture.  

The vineyards face north on the Massif de Fontfroide, and vines are planted on decomposed sandstone. Fermentations are spontaneous with natural yeasts, and wines are vinified without additions.

Always looking for new ideas to make fun and enjoyable wines from their biodynamic vineyards, Nicolas and Karine started making this sparkling red pet-nat in 2020.  It's 100% Cinsault, and they decided to make a red because very few other people are doing that and they wanted to see how it would turn out. Nicolas and Karine Mirouze created the "ouze" line of wines as a way of making, fun easy to drink "vins de soif" from their biodynamic farm in the south of France. The wines are all naturally vinified with a light touch and minimal added sulphur.
