After mastering biodynamic farming and vinification at Valetin Zusslin, Alsace, Erwan Buchwalter found the perfect plots for his vinus vision in the Medieval village of Luecy, Savoie.
In 2022 he acquired 6.5 ha of the former Chateau de Lucey, 80% dedicated to the local Altesse grape and the remainder to Pinot Noir and Mondeuse. The plots were already certified Organic and now Erwan follows strict biodynamic principles that allow his vines to adapt to the changing climate and to produce wines of longevity. The wines are vinified in the ancient fortress of Lucey.
The grapes are hand harvested and fermented naturally using indigenous yeasts. They are 100% de-stemmed with 75% directly pressed and 25% macerated on the skins for 8 days. The wine is then aged for 10 months on the lees (75% in stainless steel and 25% in barrel) before bottling with no filtering or fining with a tiny amount of sulphur.
