David and Namina Didon established Domaine Didon in 2017 in Chassey-le-Camp, just south of Beane, which belongs to AOC Bouzeron (the only appellation for Aligote). They have 15 years experience at De Montille in Volnay, and recently they spent time with Patrick Meyer in Alsace, a leading expert in the homeopathic treatment of vines. They have a huge commitment to bio-dynamic farming and a lot of work has gone into bringing their 2 ha to full biodiversity. We believe their ethos and their wines work so well in our portfolio of dynamic, passionate and environment-conscious wine makers.
The Didon's 2 ha 'lieu-dit or 'ancient vineyard' is called Vignes Blanches and is an east facing slope of yellow limestone. They protect the soil from compacting by farming with horses or by hand only. In the cellar, whilst being very hands-off, they are not afraid to try innovative techniques and ferment in barrel, amphora and fibreglass. Zero sulphur is added to Domaine wines and very little to Negoce. 100% Aligote grapes sourced carefully, pressed as whole bunch in an old wooden vertical press. Aged for 8 months in used barrels and bottled with very little SO2.
