Cosimo Maria Masini is in San Miniato, Tuscany. High in the hills, the area is most famous for white truffles. The farm is on a single hill, with 40 hectares of vineyards, olive trees and arable land. With biodynamics at heart, Cosimo Maria Masini are passionate about mixing the use of the land to encourage as much biodiversity as possible. The vineyards are spread over 13 hectares, at about 100masl.
Daphne grapes are from a parcel of 60 year old vines intermingled with other plants, which is an old Tuscan tradition. Grapes are harvested by hand before being crushed and de-stemmed and macerated on their skins. They are then fermented in concrete tanks with yeast or SO2 additions. Wines are racked a few times over winter before being bottled without fining or filtration in the early Spring. Clean, precise and delicious natural wine.
