Tacherons (from the word tâche, meaning task in English) comes from an old Burgundian tradition of contracting independent workers for each job in the vineyard. Having honed their skills in the Mâconnais, they have applied their mastery and style to viticulture in southern France. The Haute Vallée, near Limoux, where the climate and soils are similar to Mâcon, are perfect for growing Chardonnay and Pinot Noir. These wines are amazing value— Burgundy without the price point!
The clay-limestone soils of the Limoux are perfect for Pinot Noir. The grapes are grown at 350m above sea level, tempering the warmth of the Southern French climate, making a fruit-forward soft Pinot Noir. The grapes are fermented in tank, punched down once a day, and kept at 25 degrees C for fermentation. Ageing is in 80% tank and 20% oak barrels.
