In 2013 the city of Dijon purchased a 160 hectare property on the edge of the city, complete with a winery and 8 hectares of planted land (5 red, 3 white). They then ran a competition, the prize: to run the estate and have free reign on the wine made there. The only requirement was that the winemaker must be young with no existing family vineyards and pay an annual rent to the city of Dijon of 2,000 bottles. Marc Soyard, originally from Jura, had previously worked at Domaine Bizot in Vosne-Romanee as the vineyard manager, working closely with Jean-Yves Bizot in the winery. Marc has a very hands off approach to winemaking, farming organically with biodynamic practices.
Although the Domaine is Bourgogne AOC, Marc also has the exclusive right to label under 'Coteaux de Dijon'.
'Le Cras' comes from a section of the vineyard in the middle of the slope, which has the best aspect. The wine is fermented, and spends a year in old oak barrel.
Vinification is done with natural yeasts, with elevage in a mix of new and old barrels. Marc often experiments with different types of wood such as chestnut and acacia. Minimal SO2 added at bottling, minimal use during fermentation and elevage depending on vintage.
