Les Vins Pirouettes is a cooperative project started by Christian Binner. To encourage more growers in Alsace to work biodynamically and with zero/zero winemaking, he started Les Vins Pirouettes to sell their wine as a collective. Never blended, as in a traditional co-op, each cuv?e is made at the young vigneron?s winery that supplied the grapes, and Christian lends a hand, offering advice and guidance. Each cuv?e features the Pirouettes name and the Grower?s name. 

Farming and Winemaking

Domaine l'Ecole is the wine making school of the region teaching the next generation of vignerons, specifically in organic practices. The Gewurztraminer grapes spend five days on skins before fermentation with the muscat in stainless steel vats with no SO2.
