We've sourced the Sauvignon Blanc grapes in South West France from 15 year old vines on Limestone soils at 250-350m in altitude. The grapes are harvested in the coolness of night and fermentation takes 15 days in stainless steel tanks. Malolactic fermentation is blocked. This is a fresh, mineral expression of Sauvignon Blanc.
