Producer

Florent Boutin?s family have been making wine for four generations and has been present on the land since 1724. The Mas Cabres plot was first used for grazing goats. They farmed sustainably for years and are now fully organic. Florent believes that low intervention in the vineyard and the winery makes for the most expressive wines of his terroir.

Farming and Winemaking

The vineyard is in the foothills of the C?vennes and comprises of scree limestone slopes with flinty red clay and marl. The grapes are pressed after chilling and fermented and aged in tank, ageing for six months on fine lies.
